Vegan Sausage Onions and Peppers Sandwich

This has to be my absolute favorite vegan creation.  Imagine the taste of juicy sausage along with onions and peppers on a panini-style sandwich, but the best part is.. you can eat two of these sandwiches and then go play ball and not even skip a beat.

Sausage Onions and Peppers Sandwich

Ingredients

Vegan sausage:
1 block of tempeh
Drizzle of olive oil
2 tbsp of liquid aminos
2 tsp of garlic powder
1 tsp of salt
1 tsp of dry oregano
2 tsp of anise seed
1 tbsp of red pepper flake

Sandwich:
Drizzle of olive oil
1 yellow onion
1 red bell pepper
2 slices of Italian bread
Butter
Handful of vegan mozzarella


Steps:
1. Cut up the tempeh into thin strips.
2. Add all of the tempeh sausage ingredients to a ziplock bag, then add the tempeh.  Let this marinate for 15-30 minutes.  I like to also press the ingredients into the tempeh.
3. Throw the tempeh in a frying pan with a drizzle of olive oil on medium heat.  Flip the tempeh regularly, but let the frying pan sear the sides of the tempeh until they have browned.
4. Remove the tempeh, and set aside.
5. Add another drizzle of the olive oil to the pan.  Add chopped onion and red bell pepper.
6. Cook on medium heat until translucent, then remove and set aside.
7. Add butter to the pan, then add the bread and let it warm up and crisp.
8. Next add butter to the top side of the bread then flip to crisp the opposite sides.
9. Add a little bit of mozzarella to one side, then add the cooked onions and peppers.
10. Next add the tempeh, then throw a little bit more mozzarella on top.
11. Add the other piece of bread on top, and press down slightly.  Cook until cheese melts a bit.
