Vegan Chickpea Burgers

Anyone whose eaten the vegan diet is pretty much used to the chickpea.  We throw them on salads, make hummus, and include them in vegan chili.  Here’s another way you can use them to make a standard burger...FYI burgers are definitely a standard for a guy.  When you have some extra chickpeas around the house, try your hand at a chickpea burger, try it this way or make it up as you go.

I always like to start a veggie burger recipe with the small things, like for this recipe: garlic, chopped onion, spices, peppers, etc.  This will assure that the small things really get emulsified.


Once you throw in the chickpeas, let it blend for a while until smooth.

Throw some oil in the pan, form patties, and toss the burgers in the pan.  


I’ve included two ways to put the burger together.  One way is a traditional burger, and the other one is a nice fresh ranch jalapeño chickpea burger.

Ingredients

Chickpea burger:
1 cup of chickpeas rinsed
1/2 yellow onion chopped
1-2 cloves of garlic
Drizzle of olive oil
1/4 cup of flour
1 tsp paprika
1 tsp cayenne powder
1/2 tsp salt
1 tsp pepper

Traditional burger:
Buns (toasted)
Spinach
Pickles
Yellow or red onion
Mustard
Ketchup
Vegan Cheddar cheese

Ranch jalapeño burger:
Buns (toasted)
Spinach
Pickles
Vegan ranch
Yellow and red onion
Vegan Pepper jack

Steps:
1. Throw garlic and onion into the blender, and give it a good blend.
2. Throw in a drizzle of olive oil, then add the spices, then add the flour, then add the chickpeas and blend thoroughly.
3. Put a drizzle of olive oil in a pan with medium heat. Form patties and throw them into the pan.
4. Let it cook until crispy on the edges about 5-8 minutes, then flip and cook for about another 5 minutes.
5. While cooking the burgers, toast your buns.
6. Add the condiments for whichever burger you’d like to try...or try them both!
