Vegan Thai Fried Rice

So many people say that eating vegan is hard. I wanted to post this recipe to show that eating vegan is actually pretty easy.  As most guys, I don’t like complicated recipes.  This recipe can have so many variations, try to make it as spicy, savory, or as sweet as you like.

This is also my first attempt at a recipe video, let me know if it turned out ok. 


 Ingredients

1 cup of rice dry
Drizzle of olive oil
4 cloves of garlic
1 tsp of ginger
1 yellow onion
1 tbsp of red pepper flake
1-2 carrots chopped
3-4 baby bok choy chopped
Drizzle of soy sauce or aminos
1/2 tsp of seasame oil
2 tbsp of red curry paste
16 oz of pineapple chunks
Handful of cilantro chopped
Handful of basil chopped
Hot sauce of your choice

Steps:
1. Follow the directions to cook your rice
2. In a separate pot, warm up a drizzle of olive oil, then throw in your garlic and ginger.
3. After the garlic and ginger has warmed up, throw in your onion.
4. After the onion has softened and carmelized a bit, add your red pepper flake.
5. Next add the carrots, let them cook a little
6. Next add the bok choy.
7. After the bok choy has wilted a little bit, then add your soy sauce, seasame oil, and red curry paste.
8. Stir it around until it’s spread evenly, then add the pineapple chunks.
9. Add the cooked rice, and stir to mix evenly.
10. Cook for about 3-5 minutes, then dish out, and serve with chopped cilantro, chopped basil, and hot sauce.
