Vegan Cauliflower Curry Tacos

Most guys value the transformation of leftovers. One of my favorite things to do is when you run out of rice for leftover food Indian dishes...turn them into tacos.  It’s what I like to call Indian food fusion.

Ingredients:
Indian food leftovers. For this dish I used leftovers from this excellent recipe from
Tortillas
Handful of greens
Chopped cilantro
1/4 cup of chopped yellow onion
Avocado
Habenero, Scotch Bonnet, or Tabasco Green jalapeño hot sauce
Tahin
Splash of lime

Notes:
For the hot sauce you can whatever hot sauce you want, but these are the ones that match the flavors the best for my tastes. In the past I like a drizzle of non dairy yogurt too, but I didn’t have any in the fridge for this demo.

Steps:
1. Heat up your leftovers, warm up your tortillas, and chop up your onions and cilantro. These can all happen simultaneously to save time on your lunch break.













2. Get some hearty helpings of leftover Indian food on your tortilla.













3. Next add your greens, cilantro, and onion.













4. Next add your avocado.

5. Lastly add your hot sauce, splash of lime juice, and Tahin
