Vegan Gyro Tempeh Sandwich

This Greek-inspired sandwich combines your love of gyros and your love of sandwiches.  There are so many cool combinations you can do with this recipe, so stick to it if you’d like or add your own twist!

Ingredients:

Gyro tempeh:
1/2 block of tempeh
4 tsp of aminos
1 tsp of ground cinnamon
1 tsp of ground clove
1 tsp of cayenne pepper
1 tsp of garlic powder
1 tsp of oregano

Sandwich:
1/2 whole wheat baguette    
Vegan mayo drizzle
Hummus drizzle
Lettuce
Tomato
Red onion  
Pickle spears (homemade or from a jar)
Vegan Taziki sauce
Parsley
Vegan Parmesan


Notes:
In the following sandwich, as an afterthought I thought that some chopped kalamata olives and a dash of Tabasco would go good with it. And maybe next time I might press the sandwich in the pan with some butter...I’ll let you know how that goes.

Steps:
1. Cut your bread and add mayo to one side and hummus to the other.









2. Add the lettuce to one side and red onion.









3. Dice up your tomatoes, then those and two pickle spears.









4. Drizzle on some taziki sauce, and add some vegan Parmesan.









5. Add your gyro tempeh, then it’s optional to add some hot sauce or kalamata olives.
