Green Enchilada Chorizo Sandwich

This Mexican-inspired sandwich will blow your socks off.  If you love chorizo, green enchiladas, and sandwiches, then you and I think a like. Try this recipe and feel free to add your own twist, make it your own!

Ingredients:

Chorizo tempeh:
1/2 block of tempeh
4 tsp of aminos
1 tbsp of paprika
1 tsp of cayenne pepper
2 pods of arbol pepper
1 tsp of garlic powder
1 tsp of oregano

Sandwich:
1/2 whole wheat baguette      
Vegan mayo  
Lettuce      
Cilantro
Roasted red peppers
1/2 avocado diced
Green enchilada sauce
Red onion (optional)
Vegan cheese (optional)


Notes:
In the following sandwich, I forgot to include red onion and vegan cheese, but I woul highly recommend it. The sandwich is good either way, and I’m sure with your own add-one you can make it even better. I’d love to hear your comments on your take on this sandwich.

Steps:
1. Dice the tempeh into small squares.        










2. Throw the tempeh into a ziplock bag, then add the aminos.              










3. Add all the spices for the chorizo, then mix it up. After it’s been mixed press down on the bag to really push the spices into the tempeh.        











4. Throw the tempeh into a pan and put on medium heat.  Cook until browned on each side and continue to flip.        










5. Cut the baguette and gather your sandwich supplies.        










6. Add some mayo and then add lettuce and cilantro.  










7. Add roasted red peppers and then dice 1/2 of your avocado and add that.    









8. Add the green enchilada sauce on top of the avocado and add your chorizo tempeh to the other side.









9. Add any other extras you’d like, such as: vegan cheese, red onion, or tahin.
